Avocado Scrambled Eggs

A healthy way to start the day.

  • 2 eggs
  • 1 tsp butter or margarine
  • 1 avocado, diced
  • 1 tsp chives, chopped
  • Salt and Pepper to taste
  1. Heat a skillet over medium low heat. In a small bowl beat the eggs until light in colour, about 30 seconds.
  2. Once the pan is hot, add the butter to the pan, and swirl to coat. Pour in eggs. Stir the eggs occasionally, until they start to set.
  3. Add the avocado, and continue stirring until the eggs are fully cooked.
  4. Top with fresh chives to serve and season with salt and pepper to taste.
