Homemade Sausage Rolls

If making your own sausage meat, you'll need about 1 Kg minced pork shoulder, 40 grams breadrumbs and a teaspoon of seasoning mix (1 part each of salt, ground black pepper, celery salt and 2 parts thyme).

Ingredients:

Four 230 grams shop-bought or home-made puff pastry. Use the Rectangular puff pastry rather than the circular.
1 Kg sausage meat
40g panko breadcrumbs. If you live in the UK you can buy larger breadcrumbs here https://www.tesco.com/groceries/en-GB/products/268582625
One egg.

Pre-heat your oven to 190 C.

Mix in 40g panko breadcrumbs into the sausage meat. Use water on hands. Stops sticking.
Important: Place the sausage meat in the fridge for at least 45 mins. This allows time for the breadcrumbs to soak into the meat.

Roll the meat into sausages about 300mm (1 foot) long. You should get at least 4 long sausages. Put them in the fridge and roll out your puff pastry on a floured surface until it is about 300mm (1 foot) wide. Straighten up the edges with a ruler. Place one sausage on the pastry about 2cm (1 inch) up from the bottom, lift up the bottom edge of the pastry and roll it over the sausage making sure that there are no air gaps between the meat and the pastry. Where the rolled-over pastry meets the main sheet, use a brush to spread a narrow strip of egg wash to form a seal. Cut the pastry sheet just above this wet strip, and finish the long sausage roll by rolling it over to the cut edge. Press the cut edge down on to the main sausage roll.

Repeat for your other long sausages. Place them all side by side, and, using a steel ruler and a knife, mark off every 5cm (2 inches). Cut across all 4 long rolls with the ruler. The individual rolls will be flattened when you cut them but just give each one a squeeze to regain the cylindrical shape.

Place all the rolls on a baking sheet lined with greaseproof paper, and brush the top and sides of each one with beaten egg. Make two diagonal slashes in the top of each roll, and place the whole lot in the oven for 20-25 minutes.


Heating up Sausage Rolls
Remove from freezer and allow to thaw in the fridge.
Preheat oven to 180 degrees Celsius (i.e. medium)
Place rolls on grease proof paper-lined baking tray.
Bake on a middle rack of the oven for 10 minutes, then remove.
